Meat Masterclass

The traditional art of butchery is almost lost. In this course, we will revisit those cutting skills, explore the different primal cuts and understand the best applications for cooking the various muscle groups.

Equally as important as the cooking, is the resting of meats which we will learn. We will then consider the best sauces and accompaniments for each.
